Ayala Fry Recipe — Kerala Style Mackerel Fry

Ayala (Indian Mackerel) is one of the most affordable and widely available fish in Kozhikode. Fried in coconut oil with a bold red chilli and turmeric marinade, it becomes golden, slightly charred and incredibly flavourful. It is the kind of recipe that turns a simple bowl of rice into a complete meal.

Ingredients

  • 4 medium ayala (mackerel), cleaned and scored
  • 2 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp black pepper powder
  • 1 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • Curry leaves
  • 3 tbsp coconut oil
  • Salt to taste

Preparation Time

Prep: 10 minutes | Cook: 15 minutes | Total: 25 minutes | Serves: 4

Cooking Method

  1. 1Clean and score the fish with 3–4 diagonal cuts on each side to help the marinade penetrate.
  2. 2Mix chilli powder, turmeric, pepper, ginger-garlic paste, lemon juice and salt into a paste.
  3. 3Rub the marinade all over and into the cuts. Rest for at least 10 minutes.
  4. 4Heat coconut oil in a flat pan on medium-high. Add curry leaves.
  5. 5Fry the fish for 4–5 minutes per side until the skin is golden and crisp.
  6. 6Drain on paper and serve with sliced onion and lemon.

Tips for Better Taste

  • Score the fish deeply so the masala reaches the flesh.
  • Do not move the fish while it is frying — let the crust form first.
  • Add a pinch of rice flour to the marinade for extra crisp skin.
  • Fresh ayala fries much better than fish that has been stored for even a day.
