Chemmeen Curry Recipe — Kerala Prawn Curry

Ingredients

  • 500 g fresh chemmeen (prawns), cleaned and deveined
  • 1 small raw mango, sliced (or 2 pieces kodampuli)
  • 1 cup thick coconut milk
  • 1 cup thin coconut milk
  • 2 tsp chilli powder
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • Shallots, ginger, garlic, green chillies
  • Curry leaves, coconut oil
  • Salt to taste

Cooking Method

  1. 1Heat coconut oil in a pan. Add shallots, ginger, garlic and green chillies. Sauté until soft.
  2. 2Add chilli powder, turmeric and coriander. Stir on low heat for 1 minute.
  3. 3Add thin coconut milk and raw mango or kodampuli. Bring to simmer.
  4. 4Add prawns. Cook uncovered on medium for 8 minutes.
  5. 5Stir in thick coconut milk. Heat gently for 3 minutes. Do not boil.
  6. 6Add curry leaves and a drizzle of coconut oil. Serve with rice.

  • Do not overcook prawns — they are done when they curl into a C shape and turn pink.
  • Raw mango adds a fresher, brighter tang than kodampuli.
